Description:
This dodine was used at Stag’s Leap Wine Cellars in Napa, California during the 1990s. A long, curved, stainless steel rod with a freely rotating blade at the end, the dodine is used to stir the “lees,” or sediment in a wine barrel. Some winemakers believe that stirring the lees is essential to creating deeper, more complex aromas and flavors, and a smoother taste.
